We reached out to each of the 2015 World Barista Championship competitors prior to their routines, to learn a bit more about them as competitors and coffee pros. We hope you enjoy these interviews!

Competition Coffee: Panama Kotowa Duncan (Washed & Natural) Geisha

Signature Beverage: I’m using a new espresso style. The components of my signature beverage are just coffee and water. I will let the coffee talk, explain itself, without adding any other ingredients to amplify or to emphasize how delicious it is. It involves three double shots of espresso, two of which will make the base. The third shot is put back into a Mypressi to extract again with the same coffee grinds, then added into the base to increase the sweetness and mouth feel.

Routine Theme: The evolution of espresso style.  Every espresso style represents the culture of a certain time, and I want to make a new espresso style for our time.
