Routine Theme: Wild coffee. We work in an industry that is chasing something that is ultimately unattainable. We are seeking exact uniformity and consistency in nature and this goes against what nature is. Of course we can improve both, but there comes a point at which we have to accept that there is variance. Currently variance is viewed negatively, but what if it can be embraced to produce great coffee?
